Squash Soup
Directions: In large pot, heat oil and sauté garlic until clear. Add squash, carrots, leeks, potatoes, and stir in oil; cover and heat for 15 minutes; stir once or twice. Add tomato paste and vegetable stock. Bring to a boil; reduce heat and simmer for 45 minutes. Add soy milk, curry powder, cardamom, coriander, and salt; simmer for 15 minutes. Remove from heat and purée. Flavor is best if made the day before. Serve hot, garnished with parsley sprigs. Serves: 8.
