Tabouli   

Ingredients:

1/2 c. fine bulgur
4 bunches of parsley, chopped
1 bunch green onions, chopped
2 large tomatoes, diced
1/2 bunch mint or 2 T. dry
1 t. salt
1/2 c. olive oil
3 lemons, juiced

Directions:

Soak bulgur in room temperature water until soft (approximately 1 hour). Drain the water. Remove stems from parsley. Chop fine, and combine with the remaining ingredients. Serve chilled. Serves: 10.
