Avocado, Orange, and Tomato Salad   

Ingredients:

2 ripe avocados, peeled and cubed
1/2 c. lemon juice
4 ripe, firm tomatoes, chopped
2 large oranges (peeled, sectioned, seeded, and cubed)
1/4 c. chopped parsley

Directions:

Place cubed avocados in a small bowl; cover with lemon juice while preparing the remaining ingredients. Place tomatoes, oranges, and parsley in a medium-sized bowl. Combine gently. Just before serving remove avocados from the lemon juice and combine with the other ingredients. Serve immediately, as avocados brown quickly. Serves: 8.
